A rich and bold blue flavour experience, with a spicy luxurious sweet finish, which is a characteristic of Whitestone’s unique and distinct blue culture. A soft buttery texture which melts in your mouth.
Vintage Windsor Blue is made with low moisture curd when run from the vat. The lower moisture allows us to mature the cheese for another 2 to 3 months to intensify it’s rich complex full flavours.
Aging this cheese longer than our Windsor Blue allows the blue culture to develop further, intensifying the flavor profile of the rich and distinct blue culture. We have always known we were onto a good thing, but it has been wonderful to have it recongnised nationally and internationally, particularly after receiving a silver medal for it at the World Cheese Awards in Wisconsin, United States.
