With this Premium Black Label cheese we have employed historic and centuries old hand craft cheese making techniques to produce a cheese with texture and flavour yet to be seen in New Zealand.
A traditional Camembert style cheese, our Lindis Pass Camembert is a high moisture, full flavoured, rapid-ripening cheese, which has evolved from our already successful Lindis Pass Brie.
It has a wonderful combination of a full flavour plus a velvety texture. It will “run on” when ripe, making it rich, soft and gooey. As it ages it becomes softer in texture, and stronger in flavour. Made in our small artisan sized vat, each batch is hand cut, ladled and prepared in small quantities. It is then hand wrapped in black cheese paper to retain optimal moisture content. Each round is held in a cardboard tray to ensure the delicate cheese retains form once on the shelf.
