Aged to produce a full-bodied flavour profile with a strong to sharp acidic finish that intensifies with maturity. Strong, full bodied, punchy with a savoury aftertaste.

Aged Airedale was our first semi soft style cheese and is totally unique to Whitestone Cheese.

The red wax is applied to the cheese when it is five days old, this is to help it mature and gives it character. It is aged for a minimum of six months to ensure a full flavour profile.

Aged Airedale is named after the Airedale farming district in North Otago’s rolling lowlands, on the outskirts of Oamaru.

Match with...

  • Medium-bodied red wine such as cab merlot, cab sav or shiraz or Light beer, pilsner.
  • Serve at room temperature on your cheese board with plain crackers. Also add as distinctive flavour to savoury sauces, fondues and is a great addition to the traditional Southland cheese rolls.
