Enjoy this delicious and unique way to enjoy Windsor Blue Cheese, with the added flavour and sweetness of late harvest dessert wine!
Ingredients:
1.8kg or 3.6kg wheel of Windsor Blue, or a 125g wedge of Windsor Blue or Vintage Windsor
1/2 cup high quality late harvest dessert wine
Fresh crusty bread, sliced
Instruction:
If using a wheel: Remove the Windsor Blue Cheese wheel from its packaging and place it on a clean, flat surface. Using a sharp knife, carefully cut around the edge of the cheese wheel to separate the outer rind from the cheese.
Using a spoon, carefully scoop out the cheese from the centre of the wheel, making sure not to damage the outer rind.
For wheels and wedges: Place the cheese in a mixing bowl. Add small drizzles of late-harvest dessert wine to the bowl with the cheese and mix thoroughly until the wine is evenly distributed and the cheese has a lumpy cottage cheese texture.
Spoon into a serving bowl, or carefully spoon the cheese mixture back into the outer rind of the cheese wheel.
Serve the scooped Windsor Blue Cheese with Late Harvest Wine with fresh crusty bread, sliced into bite-sized pieces for dipping into the cheese mixture.
