Inspired by our new Diner & Deli recipe in Oamaru, the Toffee Baked Mt Domett is a moreish and decadent creation which is delicious and simple. Featuring Mt Domett Double Cream Brie.
Ingredients:
250g Mt Domett Double Cream Brie
3/4 cup sugar
2 Tbsp water
Fresh seasonal fruit and berries (dried fruit if out of season)
1/4 cup nuts of your choice (finely chopped)
Instructions:
Place the ripened Mt Domett on a small serving dish.
Place the sugar and water in a small pot over a medium heat and gently stir until the sugar is mostly dissolved. You can add a little extra water to help with this as undissolved sugar crystals will be problematic.
Once the mixture starts to boil then you need to stop stirring.
Once the sugar syrup starts to colour then watch carefully and tilt the pan to get an even colour. As soon as it gets to a rich caramel colour then quickly remove from the heat and pour over the top of the Mt Domett, it will also run down the sides.
Immediately top with nuts and fresh or dried fruit of your choice, allow a few minutes to set.
Slice and serve as a sweet decadent dessert.
