Jazzing up the ham and cheese toast with ham off the bone, Waitaki Camembert and sweet caramelised onions.
Ingredients:
1 large red onions, sliced
1/2 knob of butter
1/2 teaspoon brown sugar
1 sprig of thyme, leaves removed
4 slices of sourdough
1 tablespoons wholegrain mustard
2 slices of ham off the bone
90g Waitaki Camembert, thinly sliced
20g of butter - only if frying
Instructions:
In a non-stick fry pan over a low heat, fry onions, brown sugar and thyme in butter until soft and caramelised. This will take roughly 30 minutes.
Place 4 pieces of sourdough on a chopping board, smear each piece with wholegrain mustard. Top with a piece of camembert, a slice of ham, caramelised onions and another slice of camembert. Finish with another piece of sourdough.
Alternatively, melt 1/2 the butter in a large non-stick fry pan. Place 2 toasties in the pan and fry on both sides until golden brown and cheese has melted. Add the other 1/2 of the butter and fry remaining toasties. Best eaten staright away!
