Preheat the oven to 180°C. Cook the macaroni according to the package instructions until al dente. Drain and set aside.
In a large saucepan, melt the butter over medium heat. Add the flour to the saucepan and whisk constantly for 1-2 minutes or until the mixture is smooth and bubbly. Gradually pour in the milk, whisking constantly, until the mixture is smooth.
Add the crumbled Whitestone Cheese Oamaru Blue, garlic powder, and onion powder to the saucepan and whisk until the cheese is melted and the sauce is smooth. Season the sauce with salt and black pepper to taste.
Add the cooked macaroni to a greased baking dish. Pour the cheese sauce into the baking dish and stir to coat the macaroni evenly with the sauce.
In a small bowl, combine the panko breadcrumbs and olive oil. Sprinkle the breadcrumb mixture evenly over the mac and cheese.
Bake the Oamaru Blue Mac & Cheese for 25-30 minutes or until the top is golden brown and crispy. Remove the baking dish from the oven and let the mac and cheese cool for 5-10 minutes before serving. Enjoy!
