Whitestone’s Round Hill is an original New Zealand take on a European style cheese.
Aging is key to this semi-hard cheese. It takes a minimum of eighteen months to two years to age and for our cheese makers to be satisfied that it is ready for our customers to enjoy. This time allows for its’ complex, nutty, floral, fruity flavors and sweet finish to develop. It is worth the wait! Crystals will also develop in the cheese during the aging process, giving it a wonderful slightly crunchy texture.
Our Round Hill, as with all our other cheeses, is a result of our region’s climate, water and soils producing the premium grass which is grazed upon – and the cows then producing premium regional specific milk that we use to craft Whitestone Cheese.
The cheese is named after a small distinctive round hill which lies among local rolling farmland approximately 14km inland from Oamaru, called Round Hill.
