Whitestone Cheese Co. is the first New Zealand cheese maker to produce cheese with natural probiotics (Bifidobacteria (Bb-12) probiotic). We offer two probiotic cheeses, a brie and a camembert. Both are produced using the same type of starter, the difference between the two is that the camembert is heat treated for longer giving it a slightly stronger flavour and creamier texture than brie.
