Made from full cream cow’s milk, our Mt Domett Double Cream Brie, made using a recipe created for us by Lex Marshall, also has extra cream added. This creates a smooth textured cheese with a “wicked” rich flavour that strengthens with ageing to run at full maturity.
The amount of cream in a cheese is one of the variables that cheese-makers can use to change the characteristics of a cheese. Cream content in a cheese is largely responsible for cheese body, mouth-feel and flavour. A 'single cream' cheese is made with full cream milk where cream has been neither added nor skimmed from the milk. To make a 'double cream' cheese the cheesemaker adds more cream.
Named after one of North Otago’s highest mountains, this is an un-stabilised natural ripening style brie.
