A classic traditional blue style cheese. The curd is dissected by Whitestone’s unique sweet blue culture, producing a strong full-bodied, punchy ﬂavour with a sharp ﬁnish.

You will ﬁnd it has a denser fuller ﬂavour when compared to our buttery Windsor Blue.

Named in honour of Otago’s high country and our Scottish roots, Highland Blue reﬂects the heritage of early Scottish shepherds who settled in North Otago—many of whose families still farm the region today.
