A classic traditional blue style cheese. The curd is dissected by Whitestone’s unique sweet blue culture, producing a strong full-bodied, punchy flavour with a sharp finish.

You will find it has a denser fuller flavour when compared to our buttery Windsor Blue.

Named in honour of Otago’s high country and our Scottish roots, Highland Blue reflects the heritage of early Scottish shepherds who settled in North Otago—many of whose families still farm the region today.

Match with...

  • Pinot Noir or a Dark ale, strong lager
  • Serve at room temperature on your cheese board with plain crackers, crusty bread, salads, sweet fruit and chutneys or pastes made of fig, pear, quince or plum.
