Father’s Day Breakfast: Three Cheesy Recipes Dad Will Love

Make Father’s Day morning extra delicious with a breakfast made for Dad. Whether he likes a hearty brunch, something quick and crispy, or a seriously cheesy toastie, we’ve got three recipes worth getting out of bed for.

And, of course, there’s plenty of Whitestone cheese involved.

Sausage, Egg & Cheese Breakfast Hand Pies

The one to make when you want to impress Dad.

Golden, flaky puff pastry filled with savoury sausage, scrambled egg and melted cheese. These little breakfast hand pies are easy to eat, perfect for sharing and make a great centrepiece for a relaxed Father’s Day brunch.

Ingredients

  • A little oil, for cooking

  • 200g sausage meat

  • 3 eggs

  • ½ tsp black pepper, plus extra for topping

  • ¼ tsp fennel seeds, plus extra for topping

  • ¼ tsp salt

  • 1–2 sheets ready-made puff pastry, thawed

  • ½ cup grated Whitestone Cheese - Creamy Havarti

Method

  1. Preheat the oven to 220°C.

  2. Beat 2 eggs plus the white of the third egg in a bowl. In a separate bowl, beat the remaining egg yolk for brushing the pastry.

  3. Heat a little oil in a frying pan over medium-high heat. Add the sausage meat and break it up with a spatula. Cook for about 5 minutes, until cooked through.

  4. Add the beaten eggs to the pan and stir together with the sausage. Season with black pepper, fennel seeds and salt. Cook until the egg is just set.

  5. Remove from the heat and stir through ¼ cup of the grated cheese.

  6. Roll out the puff pastry and cut into squares.

  7. Divide the sausage, egg and cheese mixture between the pastry squares. Fold the corners into the centre and gently pinch them together.

  8. Brush each pastry with beaten egg yolk and sprinkle with the remaining cheese. Add a little extra black pepper and fennel seeds if you like.

  9. Bake for 18–20 minutes, or until puffed and golden.

  10. Leave to cool for a few minutes, then serve warm.

Whitestone tip: Switch up the cheese depending on what you have in the fridge. A good melting Whitestone variety will make these extra delicious.


Cheesy Breakfast Quesadillas

For the Dad who likes breakfast with a bit of crunch.

Crispy tortillas packed with fluffy eggs, sautéed onion and capsicum, and plenty of melted cheese. Add bacon, ham or sausage to make them even heartier.

Ingredients

  • 4 large eggs

  • 3 tbsp milk

  • 2 tsp butter

  • ¼ cup diced capsicum

  • ¼ cup diced onion

  • 4 small flour tortillas

  • 110g Whitestone cheese - Aged Airedale, grated or sliced

  • Salt and pepper

  • Optional: cooked bacon, ham or sausage

Method

  1. Whisk the eggs and milk together and season with salt and pepper.

  2. Melt half the butter in a frying pan over medium heat. Add the onion and capsicum and cook until softened.

  3. Remove the vegetables and set aside.

  4. Add half of the egg mixture to the pan and cook until just set.

  5. Place a tortilla in the pan and top with the egg, vegetables and plenty of cheese. Place another tortilla on top.

  6. Cook until golden and crisp, then carefully flip and cook the other side until golden and the cheese has melted.

  7. Repeat with the remaining ingredients.

  8. Slice into wedges and serve hot.

Dad-approved upgrade: Add crispy bacon or sausage for an extra-hearty breakfast, and try our Mt Kyeburn aged smoked cheddar for an extra hit of rich, smoky flavour.


Breakfast Grilled Cheese

Because grilled cheese for breakfast just makes sense.

Take the classic grilled cheese and turn it into breakfast with crispy bacon, sausage, scrambled eggs, chives and plenty of melty Whitestone cheese. Crispy on the outside, gooey in the middle — exactly what a lazy Sunday morning calls for.

Ingredients

  • 4 thick slices of bread

  • 250g sausage meat

  • 6 rashers streaky bacon

  • 6 eggs

  • 2 tbsp butter, plus extra for spreading

  • 2 tbsp fresh chives, chopped

  • 110g Whitestone cheese - Livingstone Gold, sliced

  • Salt and pepper

  • Sriracha, tomato sauce or your favourite breakfast sauce

Method

  1. Cook the bacon in a frying pan until crispy. Set aside.

  2. Cook the sausage meat in the same pan until browned and cooked through. Set aside.

  3. Melt the butter over low heat. Add the beaten eggs and gently stir until softly scrambled. Season with salt and pepper.

  4. Butter the outside of each slice of bread.

  5. Layer the cheese, sausage, bacon, scrambled egg and chives between the bread. Add a little Sriracha or your favourite sauce if you like.

  6. Heat a frying pan over medium heat and cook the sandwiches until golden on both sides and the cheese is melted.

  7. Slice in half and serve hot.

Our tip: Keep the scrambled eggs nice and soft — they’ll continue cooking while the sandwich gets golden and crispy.
